Food Science

Outline of Chair

To make research on the relation of food and human health, evaluation and improvement of food function, and food safety.

Research Fields

This chair consists of the four fields of: Science of Food and Health Relation, which researches environmental stress reactions of animals, plants and microorganisms and the development of functional microorganisms; Science of Food Function Analysis, which analyzes tertiary functions of food and food materials on a molecular level; Development in Food Functions, which researches living organism regulatory functions and their utility for agriculture and livestock; and Science of Food Safety, which researches the analytical science of food and food materials and safe fermentative production.
