Genetically modified lactic acid bacteria (gmLAB) Laboratory of Molecular BiotechnologyTakeshi SHIMOSATOProfessor, Ph.D.•Functional foods/feeds•Food immunology•Lactic acid bacteria•Mucosal vaccine•AdjuvantResearchintotheactionofprobioticsagainstinfectiousandinflammatorydiseasesandallergieshasrecentlyattractedconsiderableattentioninboththemedicalandfoodsciences.Ourcurrentresearchonthebioregulatoryfunctionoffoodproducts,particularlyinmaintainingbiologicalhomeostasisviaintestinalimmunity,hasinvestigatedtheimmunoregulatoryeffectsofprobioticlacticacidbacteriaandledtotheidentificationofactivationsequencesincludingspecificDNAmotifsinthegenomicDNA.Exploitingthispropertymayalsoproveusefulinthedesignandproductionofnewfunctionalfoods/feeds.Wearelookingforahighlymotivated,interactiveindividualtojoinateamofbasicscientistswhoseaimistodeveloppotentnewfunctionalfoods/feedsapproaches.Immunostimulatory oligodeoxynucleotides (ODNS) from lactic acid bacteria and bifidobacterium.Our group has identified immunostimulatory sequences of DNA (ISS-DNA) from immunobiotics as well as their ODN sequences.
