Laboratory of Food Molecular EngineeringKozoNAKAMURAAssociateProfessor,Ph.D.FunctionalFoods,CholineEstersPeptides,PolyphenolsAntihypertensiveFoodsTheLaboratoryofFoodMolecularEngineeringconductsresearchonutilization,quantificationandisolatedpurificationoffunctionalmoleculesinfoodandfoodresources.Cholineesters,peptidesandpolyphenolsaremaintargetcompounds,andwefocusontheireffectsonthecardiovascularsystemandnervoussystem.FoodproductsfromtheShinshuregionsuchas“fermentedfoods”,“buckwheat“and“medicinalplants”arerichinthesefunctionalmolecules.Recently,wefoundthat“eggplant”wasrichinacetylcholineandhadanantihypertensiveeffectinspontaneouslyhypertensiverat.Foodmolecularengineeringmakesthefoodfunctionalitiesmoreeffectiveandincreasestheutilityvalue.▪LacticfermentedbuckwheatThisfermentedfoodcontainsabundantacetylcholineandlactoylcholineandshoweddecreaseofsystolicbloodpressureofhumansubjects.Choline esters are NEWfood functional factors.
