Laboratory of Food Molecular Engineering Kozo NAKAMURA Associate Professor, Ph.D. Functional Foods, Choline Esters Peptides, Polyphenols Antihypertensive Foods The Laboratory of Food Molecular Engineering conducts research on utilization, quantification and isolated purification of functional molecules in food and food resources. Choline esters, peptides and polyphenols are main target compounds, and we focus on their effects on the cardiovascular system and nervous system. Food products from the Shinshu region such as “fermented foods”, “buckwheat“ and “medicinal plants” are rich in these functional molecules. Recently, we found that “eggplant” was rich in acetylcholine and had an antihypertensive effect in spontaneously hypertensive rat. Food molecular engineering makes the food functionalities more effective and increases the utility value. ▪ Lactic fermented buckwheat This fermented food contains abundant acetylcholine and lactoylcholine and showed decrease of systolic blood pressure of human subjects. Choline esters are NEW food functional factors. We are the first to isolate the natural LaCh. Food Science and Biotechnology Division ▪ Food functionality of eggplant Eggplant contains much more abundant acetylcholine than the other vegetables and is expected to have antihypertensive and anti-stress effects. Development of novel chemical reaction using organometallics is also studied. Synthesis of biologically active polyphenols We have great interest in polyphenols because of their potent biological activities. Thus, we have synthesized these molecules for analysis of their structure-activity relationships. A B C D A B C Antitumor activity of procyanidin B3 and prodelphinidin B3 against human PC-3 prostate cancer cell lines. Prodelphinidin B3 which has pyrogallol moiety (red colored) possesses significant activity. NMR is essential tool to elucidate the structure of organic compounds. Food Science and Biotechnology Division Synthesis of natural products using organometallics Stereoselective aminopalladation and oxypalladation are very important approaches for the synthesis of various natural products which contain N- and O-hetero-alicycles.
